Last night didn't go so well at all. Ate my dinner, followed by 1/2 packet grain waves and 1/2 tub salmon dip. Then followed by 4 hollow Easter eggs. I felt sooooo bad. Really really bad and woefully miserable, even texted a very good friend of mine to say that I had piled on 3kgs in 2 days and was feeling down down down.
But that was last night.
Woke up this morning with new resolve, had 2 cups of coffee about 4 cigarettes before I plucked up the courage to put on my walking shoes and hit the road to return a DVD that I'd borrowed and watched yesterday. The Kings Speech. After the Royal wedding of Wills and Kate it was very fitting and I did so enjoy it, especially as I knew the history of poor old Bertie fairly well.
But I deviate.
I grabbed the DVD and out the front door I went. I did splash my face and brush my teeth first though. Local video store about 1.2km away so off I trekked. Thought I'd be gone for at least an hour round trip. Up hill, chest bursting, gasping for air, but I carried on. Very determinedly pounded my way to video store....bear in mind this is Sunday morning and left home 6.21am.On return trip I needed a toilet really urgently and so with even more very very determined pounding I made it home.....6.48am. Was SOOOOO surprised. I had walked 2.4km in 27 min. Wow!!!!
Had worked up a sweat as well. But my hip and knee not feeling that good, they really are sore points!!!!!
Decided to prepare veggies and defrost meat for dinner, and also made 2 souffles....1xzucchini, onion and feta cheese, the other a spinach and cheese. High in protein but not very fattening.
RECIPE FOR SPINACH AND CHEESE SOUFFLE:
1 oz flour
1 oz butter
melt flour and butter together in pot on stove stirring all the time
2/3 cup milk
slowly add milk to flour and butter mixture while still on stove. Keep stirring until mixture of coating consistency.
Take off stove and season well with salt and pepper.
4 egg yolks
Add lightly beaten eggs to mixture and stir.
2cups chopped spinach ( bought already chopped and frozen from shop.Defrost and squeeze out liquid before adding to mixture.)
Add spinach to mixture
1cup grated cheddar cheese
Add cheese to mixture.
4 egg whites stiffly beaten
Fold egg whites into mixture.
Place mixture into greased souffle dish and place in oven 375-400degF for 50mins. However do keep checking after 40mins cos the shallower the dish the quicker it cooks. Souffle ready when lightly browned and springy to touch. Remove from oven and let sweat for a good 10mins before serving.
Can be served hot or cold and can also be frozen.

1 grated red Spanish onion
2 crushed garlic clove
1 cup broken up Feta Cheese
Add all to mixture and fold up together well.
4 egg whites stiffly beaten
Fold egg whites into mixture.
Place mixture into greased souffle dish and place in oven 375-400degF for 50mins. However do keep checking after 40mins cos the shallower the dish the quicker it cooks. Souffle ready when lightly browned and springy to touch. Remove from oven and let sweat for a good 10mins before serving.

I then lightly boiled 1/2 pot of mixed frozen veggies and have 4 scotch fillet steaks defrosting for dinner.
For lunch will have some souffle and make a large fresh salad.
Then I did some hand washing, made beds, straightened up rooms, had a bath, did makeup and of course must wear my perfume, souffles all ready, washing up all done......and all finished just before 9am. Good going.
For brekky ate up 3 pieces of left over watermelon and will have a plate of grapes and sliced orange to nibble on during the day.
Yep I feel good and pleased that I've been really productive this morning.

WEEK1, DAY 1
I DID hop in car and did 1 lap of the oval. It's better than nothing, but was really dark and suddenly there I was alone in the park. Not a good feeling.
Had a glass of water, and now a coffee and will delay dinner for a bit.
Now to RULES.
Do I make rules for myself?? Can I keep them??
Maybe a mix of rules AND guidelines for myself.
RULES
1. Only weigh ONCE a week.
2. Drink 8 glasses of water a day.
3. Walk every day.
4. 5 large servings of vegetables a day.
5. NO EVENING SNACKING
GUIDELINES
1.Increase walking distance/time every day
2. Food diary??
3. Clean out and tidy 1 x shelf/drawer every day.
4. Write on blog every day.
Dinner for today will be a medium bowl of chicken laksa mixed with a salad all heated in microwave. Left overs from last night.

So the real me needs some help.
For the 3rd time in my life I have hit 120kgs and am feeling very very miserable.
Yes...weight DOES impact the way one feels about oneself.
Now that was a HUGE admission.
Now I need to help myself but also need a tremendous amount of support from anyone out there.
Do I start again with all the old measuring?
I know what the scale says already.
It's the will power to get started.
The willpower to get up and moving.
The will power to keep at it.
